Zuchini Bread Recipe
I just picked a nice big zuchini out of my yard and want to make bread with it. I've been looking on-line for a good recipe. I thought maybe someone had one that they love. I make banana bread often, but I've never made zuchini bread, so I'm looking for a simple recipe. I'd take any suggestions!!

Zuchini bread is my favorite!! My mom makes the best. I have inherited this recipie. Hope this helps.
Zuchini Bread
1 Cup Veg. Oil
2 Cup Sugar
3 eggs
3 tsp vanilla
2 cups zucchini shredded/grated
3 cups Flour
1 tsp baking soda
1 tsp salt
3 tsp cinnamon
¼ tsp baking powder
Chopped nuts (optional)
Mix oil, sugar, eggs until mixed add vanilla, zucchini. In separate bowl combine dry ingredients. Add all together and pour into two bread pans greased and lightly floured. Bake 350 for about 1 hour until done.

P.S Chocolate Chips are always a delicious addition!
My zucchini recipe is in the Hampstead cookbook. It is our favorite and you can add a few Tablespoons of cocoa for chocolate zucchinin bread ify ou like. P.S. If you end up making a ton, it freezes well.
why eat zucchini bread when you can eat zucchini cake with cream cheese frosting? my recipe is in the hampstead cookbook as well.
The Bits of Zucchini Cake in the Hampstead Cookbook is really good too! I think it might be Sister Fry's recipe.
